Unless my little ones, aged four and two, wake me earlier, I wake up at 7am and, as I try to get vegetables into every meal, breakfast is normally a green smoothie, avocado on toast or porridge with grated carrots and spices.
I check my blog stats and my social media accounts in the morning. I work full-time, but I also work on the blog every day – developing recipes, editing photographs and working on social media when the kids are in bed.
Most of my recipe ideas come from farmers’ markets and vegetables that are in season. So I’ll start with kale or a cauliflower and think about which fruits or spices might work with them in a sweeter dish, often taking flavour-combination inspiration from soup and smoothies.
It can take trial and error to get it right because I always want to get as much of the vegetable into each dessert without it affecting the flavour or texture.
For lunch I’ll usually have soup, vegetables and hummus, or a tomato and cucumber sandwich with lots of mustard. And for dinner, something like falafels. I’m a vegetarian; my family aren’t, but we often eat vegan.
