It’s fair to say that I love vegetables. In fact I’m perhaps a bit obsessed. If I’m faced with a meal that isn’t filled with vegetables I get into a panic. So, when Helen at Fuss Free Flavours and Camilla at FabFood4All asked me to host October’s Extra Veg blog challenge, I was definitely up for it.
I’ve had a great time looking at all of your recipes that include a little extra veg. I’ve been inspired, delighted and left with a rumbling tummy. Thanks to everyone who linked up!

Sus from Rough Measures made this fantastic Courgette Quinoa Waffles and they sound, and look, amazing!
The Botanical Baker made this vibrant Beetroot Gnocchi With Beetroot Green and Sunflower Seed Pesto and Broad Beans – what a great way to use up her glut of giant beets!
The Veg Space made this flavour-packed Porcini Mushroom Soup. I really want some right now! She also recreated a fantastic walnut sauce that she tried at a conference to make this gorgeous Pappardelle with Cavelo Nero and Walnut Sauce.
Little Sunny Kitchen made these inspired Pumpkin Cauliflower Fritters – cauli wrapped in a pumpkin batter: how wonderful!!
Smarter Fitter has made a nourishing Carrot Cake Bircher Muesli with grated carrot and apple.
Feeding Boys and a Firefighter made a fantasticly ghoulish Halloween Vegetarian Lasagne that is bright green from spinach, and she’s brought together two lovely vegetables, leeks and broccoli in this warming soup that’s perfect for batch-cooking: Leek and Broccoli Soup
The Taste Space used loads of vegetables in this gorgeous Tangled Thai Salad with a Lime and Peanut Dressing. The flavours sound amazing!
Belleau Kitchen entered this veg-packed slow-cooker cauliflower, carrot and green bean korma, which wraps cauliflower in mild nutty flavours.
The Tofu Diaries made this fantastic Tofu Chorizo & Lemon Cauliflower Rice! Those flavours sound great.
Baking Queen 74 is a legendary slow cooker-er, and she’s excelled herself with this fabulous Slow Cooker Spiced Pumpkin Cake. Autumn perfection.
Tin and Thyme put a twist on her Cornish roots with this amazing Pumpkin Pasty! This is how I like my pasties – gourmet! Squash, Chilli, Chard and Feta Pasties.
Tales from the Kitchen Shed has made this lovely Roasted Vegetable Lasagne, packed full of veg: courgettes, aubergines, peppers…. Yum! Sarah also entered a lovely Pumpkin and Cranberry Bread which looks perfect this time of year, particularly topped with her Pumpkin Pie Jam!
Family Friends Food used up a massive glut of tomatoes in this Super-delicious Roasted Tomatoes with Kale Pecan and Goats Cheese Pesto. Tomatoes and kale – a match made in heaven!
FoodieQuine added beetroot to this amazing Purple Power Smoothie that’s full of apples, plums and blackberries. Gorgeous.
Herbs, Spices and Tradition entered this vibrant Red Cabbage Stir Fry with Coconut, which sounds soooo flavourful. She’s also linked up a Turnip and Peas Side Dish that is filled with loads of lovely spices.
Free From Farmhouse made this lovely Vegan Chocolate Beetroot Cake. I love choc beet cakes!!
Green Gourmet Giraffe has entered a lovely vegetable cake: Honey Parnsip Cake, as well as a tale of a crazy bee swarm!
Onions and Paper has crammed loads of veggies, from butternut squash to swede, into this lovely Cottage Pie.
Thinly Spread has made a gorgeous Pumpkin and Ginger Cake – perfect to take out for Bonfire Night!
